The White House Fall Garden Tour

I was fortunate enough to have the opportunity to visit the White House last weekend thanks to the Hubs. 

The White House Grounds are the oldest continually maintained landscape in the United States. Twice a year, the grounds are opened to the public for a Spring & Fall Garden Tour. And we had the chance to hang out at the White House! 

 I was ready to snap away! 

It was surreal to be walking around the White House Garden as if it was my own home.

Office/ Craft Room Facelift

New house, new mess! I was looking around my office and realized I needed it to look better and functional; some TLC and love!

We moved to Virginia in January and I need to get back onto my crafting/scrapbooking days, its been a while. So in order to get into the grove, I gotta make it look GREAT!

I have managed to create a mess and do research and lots of brainstorming. I am trying to be frugal and smart at the same way, so its going to take a bit of time to find the best deals and items. 
Before

I need to get all my things organized and thats a lot. I used to be a Creative Memories Consultant so I have lots of scrapbooking things but since they haven't been organized, I don't know where they are.

I started by making an inventory list to get an idea of what i had and what I needed to get. I wasn't surprised to find all sorts of things. It was an exhausting procedure but totally worth it. 

As of today this is how my room looks.

Photography, How I love you!

About 2 years ago I bought my first DSLR and I was immediately in love! Not only am I able to take pictures but I am able to make them my own but I was fortunate enough to be have been living in Hawaii. I took advantage of that and took tons of pictures that express the great time I had while I was there. 
They aren't only pictures but they are memories in the making!

While doing my daily Pinterest searching I came across this awesome pin. When I read it I thought it was brilliant and then decided I should spell my name out and see what's up. 
Not to my surprise but all my letters said things that I have thought about or were true,creepy! I was speechless, and that doesn't happen very often.

Missing in Action

Hello guys, been MIA lately but am back in the game. I was away on a little mini vacation and taking care of some things.


I was excited to go back home to Miami to meet the new addition to the family. My sister gave birth to an adorable baby boy.
I was able to be at my nephew's 1st Birthday and my niece's 8th. My little munchkins are getting soo big and cute. Love them!
and of course I chilled with the old lady (my mom). She's a trip.
So it was a little bit of family reunion, not complete but good enough.

Being a Tourist


Last week the hubs was bored so we decided to go for a drive and we ended up in DC. What a beautiful city but If you don’t know your way around, you will get lost like we did and we had a GPS. Go figure!
We walked around for a bit to get a little familiarized with the area since we will be going there a lot.

Ended up driving to Georgetown and stopped at Georgetown Cupcakes, they have a show on TLC~ DC Cupcakes. The hubs thought I was a dork but I was super excited! 

Can't wait to go back and explore all the wonderful places that DC has to offer.

Happy Bday to the Hubs!


Yesterday was the Hubs bday and while he was sleeping on Thursday nite I managed to get his present wrapped without him or the dogs noticing.   
X-Box (for those of you wondering)
We decided to hang out and enjoy his day at home. And while he was at work I made him some German Chocolate cupcakes with Coconut Pecan frosting. 
We drove around the base to get to know it a little better and we found some cuties!

He definitely enjoyed his day!

Red Velvet Cake in a Jar

I've always wanted to try this and since am not too into sweets I figured these single serving cakes would be enough. Lets just hope it turns out good.

You will need:
3 Large Eggs
1 ¼ cups of water
1/3 cup of Vegetable Oil
Cream Cheese frosting
A box of Duncan Hines Red Velvet cake mix
Mason Jars- 1 pint size
 For the Cupcakes:  
1. Preheat the oven to 350 degrees F.
2. Blend cake mix, water, oil and eggs in a large bowl at low speed until moistened.
3. Pour batter in pans and bake immediately
4. Bake for about 25 minutes.
5. Cool in wire rack for 15 minutes 

Assembling the cakes: 
1. Place 1 bottom in each jar and crumble with a wooden spoon to spread it
2. Put a layer of the frosting.
3. Take the top of the cupcake and place on top of the layer of frosting.
4. Flatten (gently smash) the top part of the cupcake inside the jar. You want them to get sort of flat.           
5. Frost the top of the cupcake, then screw the top on tightly.

Ripe Plantain Casserole

Yesterday was the Independence of the Dominican Republic and I decided to go back to my roots. I remember when my mom would make this so I decided to give it a try and have the hubs taste it, he loved it! It’s a good way to celebrate the Independence.

Ingredients
6 ripe Plantains
Grated cheese
¼ cup of butter
Salt   
For the filling
1 lb. of ground beef
Olive Oil
Tomato Paste and Sauce
White onion
Green Peppers
1 garlic clove
Salt and pepper to taste


1. Butter a 1-inch tall baking pan.
2. Pre-heat oven to 350 degrees.
3. Boil plantains, I prefer to not peel them, add 1 teaspoon of salt.
4. Boil until really tender. When done add the butter and mash them. Set aside.
5. In a small bowl, mix meat, pepper, onion, salt, pepper and garlic.
6. In a sauce pan heat the Olive oil.
7. Cook the meat until golden brown. Add the tomato sauce and paste.
8. When meat is cooked throughout let all the liquids evaporate, set aside.

To assemble
1. Put half of the plantain mixture in the baking pan. 
 2. Cover with cheese.
3. Cover the cheese with the meat.
4. Cover with the rest of the plantain mixture and cheese.
5. Bake until golden brown, about 20 minutes.
6. Remove from oven and let sit for 5 minutes.

Serve and enjoy!
